vietnamese:: chicken noodle soup

My twist on traditional chicken noodle soup~ but just as nourishing and maybe even more medicinal:)

So I needed homemade soup but I kinda cheated bc I'm sick and sleepy;)😷

so I used organic store-bought broth and freshly ground spices and veggies as my medicine:)))


You will need: 1 star anise (8 points)

1 tsp. black cardamom

2 cloves

1/4 tsp fennel seeds

1 tsp coriander

10 black peppercorns

1/4 tsp cinnamon

(^^ all into the coffee grinder)


Heat up a pan with EVOO to cook the veggies (carrots and kale + whatever you like:) a little before adding them the to the broth- already simmering with chopped garlic as a natural antibiotic;)~

Add spices.

Meanwhile, cook OG chicken in EVOO and rice noodles separately to add in the pot:) Then pour veggies and chicken (and all liquid in pan** to include all the nutrients cooked into the oil:) into the broth and simmer for another 8-10 min to finish cooking-

Add rice noodles and garnish with green onions:) and OG sriracha/cilantro/fresh lime!
