I love jackfruit♡♡♡- it's a great source of plant protein and packed full of nutrients and these flavors combined make it taste amazing~
And an array of green veggies and mung bean sprouts- which is one of the most nutrient dense foods there is as well- make this an antioxidant, vitamin and mineral boost in a tasty and filling vegan meal:)
Easy recipe too♡ >>>
Chop your veggies + garlic: 2-3 leeks, broccoli, green cabbage, brussels sprouts, green onions, garlic, grated carrots + 1/2-1 in. pc of ginger grated... depending how much heat you like:)
Sauté leeks, ginger and garlic in 2 Tbsp peanut oil while you chop other veggies. Add all veggies and sauté while rice noodles are cooking (~6-8 min) Cook jackfruit in oil separately or with veggies:)
Combine noodles and veggies + jackfruit in the pan...
Add 3 tbsp tamari (/soy sauce), a spoonful of crunchy peanut butter, 1 tsp coconut sugar and sriracha to taste... Mung bean sprouts on top:) + fresh cilantro / green onions
And more sriracha if you like spicy food like me:)
***You can usually find parts or half or fresh jackfruit at your grocery store!
I seriously ate every bite of the bowl pictured so yeah~ it's reallllly good♡
